This traditional wood-fired oven is composed of a brick floor, a chamotte vault, both 8 cm thick, and a bricked arch. Thanks to its high inertia, this wood-fired oven is ideal for baking pizzas, as well as lasagne, for example, between courses or even the next day. You’ll find your oven still warm the next day after an evening pizza service: the thickness of the vault and floor, the efficiency of their high-temperature insulation and the removable inner insulating door – essential for keeping the oven warm – ensure this remarkable temperature retention. Moreover, its low-vault design generates wood savings of 30% compared with high-vault wood fired ovens . Bake a variety of breads, pies, gratins and more in the morning, and save even more on wood consumption by easily bringing your oven up to temperature for the next batch of pizzas!
