Designed for large bakeries, the 3503 with a throat and lower fireplace oven is one of the ovens with a throat and lower firebox. It can bake up to 102 baguettes or 65 loaves
of 500 g bread per batch ! Made in the shape of a pear, its floor is conceived to place easily breads in the width of the baking room. This particular shape also allows to optimise the working space available at the front of the oven and make it much easy to use.

The 3503 lower fireplace and throat oven has been developed to maximize heating of the baking room. In fact, the firebox of this oven, which is located under the baking floor, and the traditional throat, allow the entire oven to be heated by passing the flames from the firebox to the baking room through a small opening in the baking floor.
The flames can be manually adjusted by means of the throat to ensure even heating throughout the oven. Once the desired temperature has been reached, remove the throat and close the passage to the firebox with the throat plate cover. The inertia of this lower fireplace bakery oven is also remarkable, thanks to its excellent insulation and the quality of its materials. In this way, the 3503 lower firebox and throat oven ensures impeccable bread baking, and allows several successive batches to be baked without the need to reheat the baking chamber.

  • A retractable door with a beautiful brass handle. This steel door also features a glass inclusion and baking room lighting.
  • 1 capillary needle thermometer with a 100 mm diameter dial.
  • A metal stand for this oven that’s easy to fit.
  • 3 metal frames to hang the vault
  • The 8 cm thick refractory vault made of chamotte concrete (or brick as an option).
  • Insulating the vault with 3 layers of high-temperature mineral fibre.
