Designed for traditional baking, this oven can bake up to 76 baguettes or 49 loaves of 500g bread per batch! Its pear shape makes it easy to arrange the loaves across the entire surface of the baking floor, which also optimises the working space at the front.
The firebox of this oven is under the floor, and the traditional throat allows the flames to pass into the baking room through a small opening in the floor.
The throat can be guided manually to direct the flame into the oven.
When the desired temperature is reached, the throat is removed and the passage to the baking room is closed by the throat plate cover.
This system ensures better heat distribution throughout the cooking area.
Thanks to the quality of its materials and its outstanding insulation, this bakery oven has excellent inertia.
