This oven with a throat and lower fireplace 2102 is one of the range of lower fireplace and throat oven. Designed for bakers who bake the bread over a wood fire or bake up 45 baguettes or 29 loaves of bread of 500 g per batch. Its pear shape optimises its surface area in relation to its size, and is ideal for shovel loading in all areas of the oven.

As with all wood-fired baker’s ovens with lower firebox, the firebox is located under the floor of the baking room, and the use of the traditional throat allows the flames to pass from the firebox through a small opening in the floor so that the flame heats the baking chamber.

The throat can be manually adjusted to orient the flame towards different areas of the baking room.  Once the desired temperature has been reached, the throat is removed and the passage to the firebox is closed by the throat plate cover. This system ensures better heat distribution throughout the baking room .
With its ‘lower fireplace’, the quality of its materials and its outstanding insulation, this bakery oven has excellent inertia.  As a result, the 2102 lower firebox baker’s oven bakes bread to perfection and can be used to bake several consecutive batches without having to reheat the baking chamber.

  • A retractable door with a beautiful brass handle. This steel door also features a glass inclusion and baking room lighting.
  • 1 capillary needle thermometer with a 100 mm diameter dial.
