Closed oven cooking
Ingredients: For 8 to 10 people
You'll need :
- A smoked pork shoulder to be cooked the day before.
- 2.5 kg mashed potatoes
- 4 onions
- Thyme, bay leaf
- Salt pepper
- 300g smoked bacon
- 100g butter
- Water or better still broth in which a smoked blade has been cooked, for example. (In this case, do not salt and blanch the meat before cooking).
Preparation time: 20 mins
Equipment: 1 Dutch oven or cast iron
Cooking: 1h30. Temperature 200°C to 220°C at closed oven
Preparation :
Prepare as for making a potato gratin.
- In the casserole dish, arrange the potato slices, alternating with the bacon bits, the sliced onions and the knobs of butter.
- Salt and pepper.
- Sprinkle everything with water or broth. To reach two-thirds the height of potatoes.
- Bake the casserole for an hour and a half.
- Right out of the oven, mix the mashed potatoes.
- Serve immediately with a rustic salad such as dandelion or lamb's lettuce and especially the piece of smoked pork cooked in its broth the day before and reheated.

Good to know: if you are lucky enough to have a garden, you can reuse the cooled ashes in your vegetable garden or at the foot of your rose bushes. Ashes are rich in elements that promote plant growth.
