Ghost Pizza with autumnal flavours for Halloween by Cedric Hervet
Delicious ghost pizza recipe for Halloween concocted by Cédric Hervet (Facebook groups Pain au levain & Co, Four à bois & Co and Passion cuisine & Co).
Ingredients for 1 Halloween Pizza :
- Pizza dough (if you don't have any prepared pizza dough, see our 2 dough preparation recipes (Pizza dough / 100% BIGA pizza dough).
- Butternut cream: 80g (the rest can be eaten as puree).
- Mozzarella cheese.
- Olives: 2
- Smoked scarmoza.
- Chestnut and pistachio slivers.
- Chestnut cream.
- Burrata with truffles: 1/2.
- Mascarpone: 2 tbsp.
Ingredients for the butternut cream:
- Onion: 1.
- Garlic seed: 1/2.
- Butternut: 1.
- Beef stock: 500ml.
Preparations :
Step 1: The preparation of the butternut cream:
1. Peel and chop the onion, the half garlic seed and the butternut.
2. Put them in a large enough pan and add 500ml of beef stock.
3. Cook covered in your wood-fired oven or on the gas.
4. Insert the tip of a knife into the butternut, it will easily go in if the cooking is finished.
5. Crush or grind in a food mill.
6. Adjust the salt if necessary.
Step 2: Preparation of the pizza :
1. Mix 1/2 burrata with truffle and 2 tbsp. mascarpone and put them in a piping bag.
2. Shape your pizza dough into a ghost shape (see photo 1 and 2)
3. Place the dough on the pizza peel (use a mixture of fine semolina and flour to spread the pizza and allow it to slide easily) and top with butternut cream, mozzarella and smoked scarmozza.
4. Place the pizza in your wood-fired oven (heated to 450°C)
5. Turn the pizza every 20 seconds to prevent it from burning.
6. After 1 min 30 and 2 min cooking time, remove your pizza.
7. Let your imagination run wild, place 2 olives in the eyes of the ghost and top the pizza with chestnut cream and the truffled burrata and mascarpone mixture.
Your ghost pizza is now ready, enjoy it before it comes to haunt your nights!

Good to know: if you are lucky enough to have a garden, you can reuse the cooled ashes in your vegetable garden or at the foot of your rose bushes. Ashes are rich in elements that promote plant growth.
