Caramel custard

Ingredients for 4 persons :
You'll need :
- 1 half liter of pasteurized milk
- 6 eggs
- 2 packets of vanilla sugar
- 2 Tablespoons of powdered sugar
- 1 bottle of liquid caramel
Preparation time: 15 mins
Equipment: Springform pan and gratin dish for bain-marie.
Cooking: in a bain-marie, 40 min or more if necessary 100 to 120°C.
Preparation :
To cook slowly the day after the batch.
- Line the bottom of a springform pan with caramel.
- Beat the eggs with the sugar and add the milk.
- Gently pour the mixture over the caramel, so as not to mix the two liquids. The mold having already been placed in the gratin dish.
- Place your two dishes, one inside the other, at the entrance to the oven and then pour the water for the bain-marie.
- Push the assembly and close the doors for about an hour. Under no circumstances should this mixture boil and should not be moved.
- To obtain a creamy flan, cooking must be done at a low temperature and for a long time.

Good to know: if you are lucky enough to have a garden, you can reuse the cooled ashes in your vegetable garden or at the foot of your rose bushes. Ashes are rich in elements that promote plant growth.
