Roman oven: the traditional pizza oven with fixed bottom
Our pizza ovens with fixed bottom are the heirs of the wood ovens conceived by the Romans. In other words, the fire is lit and controlled directly in the cooking chamber.
Therefore, these ovens are ideal for authentic pizza makers, who know how to subtly control the cooking process and produce a crispy pizza in 1.5 to 2 minutes!
Highly economical in use thanks to their low roof and high-performance insulation, our ovens also give you the opportunity to enjoy the ‘wood-fired pizza’ designation, appreciated by gourmets from all over the world.
In accordance with tradition, all of the Roman ovens that we offer in our Pro and Super Pro ranges are built with a refractory brick bottom. So, you can prepare all kinds of pizzas, including true Neapolitan pizzas directly cooked on the bottom at a temperature of about 450°C.
Many options for a highly personalised pizza oven
As the French leader in flame cooking, Four Grand-Mère offers you a very wide range of traditional pizza ovens. Each model has its own range of options.
In this way, all our ovens in the Pro and Super Pro ranges are available with the following options:
- Second entrance at 90°, 135° or 180°.
- Metal bracket for an installation without masonry work.
- Special doors: ‘show’ glass door with an opening of 60 or 65 cm…
- Raised roof and door (+ 7.5 cm)…
To meet all your needs, we also developed Nestor, a ready-to-install design wood oven, as well as 4 models of pizza ovens with a low percentage of chamotte. Extremely responsive, these ovens with reduced percentage of chamotte are recommended for more occasional use, for example outdoors.

Lightweight wood-fired ovens for professionals
These 4 models of ovens with a low percentage of chamotte offer an inertia/price ratio that has been specially developed to meet very specific needs.
These economical ovens are intended for restaurants, for example, that only serve pizzas or grilled food in the evening or at the weekend, and therefore have no great interest in retaining the heat of the oven from one service to the next.
We also recommend this type of wood ovens to restaurant owners who want to place them in an outdoor area open in season, like a summer kitchen opening onto the beach…

Our Traditional Pro wood pizza ovens
These robust, multi-purpose models with a self-supporting structure are the perfect answer to the needs of small and medium-sized pizzerias and restaurants.
The bottom and arch are made by hand using bricks produced in France. The inner roof can be built in one of the following two ways:
• In refractory chamotte reinforced with stainless steel fibres.
• In bricks lined by hand. The unique skills of the Four Grand-Mère bricklayers add timeless charm to your oven, while improving its refractory properties.
Renowned for their excellent insulation, our Traditional Pro pizza ovens are also equipped with a cast-iron outer door and an insulating door to conserve heat from one service to the next, and thus optimise your wood consumption.

Our large-capacity Super Pro pizza ovens
Designed for large pizzerias and restaurants, these ovens feature an impressive cooking capacity.
Thanks to one or more metal supports that bear the central part of the roof, you can benefit from a much larger cooking surface than in a self-supporting oven, while still maintaining a very low roof for better energy efficiency.
All our Super Pro ovens are constructed with refractory chamotte reinforced with stainless steel fibres. The bottom and arch are made of French bricks.

Designer shell
This designer shell in composite resin gives the 1030SC or PRO 950 oven a modern, elegant look. Lightweight and washable, it comes with a finishing collar. The base, designed for a perfect fit, features a front fascia allowing the addition of optional accessories such as a cutting board or ashtray.

Resin hood cladding
The hood cladding offers a quick and aesthetic solution for finalizing the installation of your oven. Made from fiberglass-reinforced epoxy resin, this hood is ideal for indoor or outdoor use, thanks to its acrylic coating. This cladding, originally white, can be repainted in the color of your choice with a simple acrylic paint.

Dome cladding
The powder-coated steel dome cladding offers an aesthetic and durable touch for your PRO 800 oven. Available in 6 elegant colors (water blue, forest green, mouse gray, crimson red, coral and beige), it combines performance and design. The front and rear panels, always black, provide a modern contrast. Supplied with black powder-coated steel conduit and cap, this hard-wearing cladding will enhance your oven for many years to come.

Customized cladding in painted steel and/or stainless steel
We offer the possibility of customizing your oven’s cladding, available exclusively as an option with the metal table. This cladding, made of painted steel and/or stainless steel, can cover the entire oven, including both the upper part (the oven) and the lower part (the metal table). If you prefer, you can also cover only the upper part. Each cladding is carefully handcrafted in our workshops, guaranteeing a personalized, high-quality finish that perfectly suits your aesthetic needs.

Choosing the brick vault option means opting for authentic charm and exceptional durability. The brick option brings a 10-year warranty to your kiln. In addition to enhancing the furnace’s refractory properties, brick provides a unique aesthetic reminiscent of the furnaces of yesteryear.
Our exclusive know-how recalls the traditional layout of bricks “en boutisses”, which highlights the shorter, more aesthetic side of the brick. This know-how gives each of our brick kilns a unique appearance and timeless charm.
The height of the interior and the door have been increased by 7.5 cm compared to the classic version, to facilitate the loading of very large pieces of meat or very tall dishes. This option is ideal for cooking game or dishes simmered in tall earthenware pots (Alsatian type).
The “2 entrances” option for a wood-fired oven adds a second opening, offering greater flexibility in its use.
The addition of this second door allows you to load the oven, and remove pizzas cooked by either of the 2 entrances. You can also install a glass door just for the unique spectacle of the flames, and create a warm atmosphere. Depending on requirements, this second entrance can be positioned at different angles (90°, 135° or 180°), to suit any configuration.
The 60 cm loading door is a major asset for restaurateurs. It allows larger dishes to be loaded into the oven, optimizing output and efficiency in the kitchen. What’s more, its width facilitates access to the sides of the oven, allowing easy use of the scoop. Choose this option to maximize your oven’s performance and meet the needs of your business.
